So for those of you who have seen any of my very early posts, you have probably seen my pina colada oatmeal.
Obviously I love the combination of pineapple and coconut because I unknowingly made almost the exact same thing!
But I didn’t. Trust me it tastes completely different and this can be prepared the night before… actually it SHOULD be prepared the night before. Isn’t that the whole point of overnight oats?
Okay so what’s also different about this recipe is the use of coconut oil.
As you guys know, when melted coconut oil touches a colder substance, it hardens to form a magic shell!
I utilized this in the recipe
You are going to need
1. 1/2 cup oats
2. 1/2 cup coconut milk
3. 1/2 cup pineapple flavored greek yogurt
4. 1 tbsp chia seeds
5. handful of pineapple… or any other tropical fruit
6. coconut extract
7. stevia or any other sweetener to taste
8. 1 tsp melted coconut oil
Combine all the ingredients except the fruit and the coconut oil
Set in the fridge overnight or at least for a few hours
When it’s fully thickened, taste and add more sweetener if needed.
If not, top with your fruit, and the all important coconut oil!
You can kind of see it. It’s that white shell over the top, trust me it’s there, and it makes the dish. When you stir it in, you get little bites of coconut-y goodness!
